Healthy Banana Protein Muffins Recipe

Ingredients
  

  • 3 ripe bananas, mashed (about 1½ cups)
  • 2 scoops (60g) high-quality protein powder (whey or plant-based)
  • cups whole wheat flour or almond flour
  • 2 free-range eggs
  • ½ cup Greek yogurt
  • ¼ cup honey or maple syrup
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch of slat

Instructions
 

  • First, gather all your ingredients. Make sure your bananas are ripe for sweetness and moisture. Measure your protein powder, flour, and other dry ingredients carefully.
  • Next, mix your protein powder, flour, baking soda/powder, and salt in a big bowl. Whisk them well to avoid clumps and ensure they're evenly spread.
  • In another bowl, mash ripe bananas until smooth. Add eggs, vanilla extract, Greek yogurt, honey and melted butter. Mix until everything is well combined. This makes a moist base for your muffins.
  • Now, gently mix wet ingredients into the dry ones. Stir until just combined - don't overmix. The batter should be a bit lumpy but well mixed.
  • Preheat your oven to 375°F. Fill muffin cups about 2/3 full with batter. Bake for 18-20 minutes, or until a toothpick comes out clean
