Healthy Banana Protein Muffins Recipe

Ingredients
  

  • 3 ripe bananas, mashed (about 1½ cups)
  • 2 scoops (60g) high-quality protein powder (whey or plant-based)
  • cups whole wheat flour or almond flour
  • 2 free-range eggs
  • ½ cup Greek yogurt
  • ¼ cup honey or maple syrup
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch of slat

Method
 

  1. First, gather all your ingredients. Make sure your bananas are ripe for sweetness and moisture. Measure your protein powder, flour, and other dry ingredients carefully.
  2. Next, mix your protein powder, flour, baking soda/powder, and salt in a big bowl. Whisk them well to avoid clumps and ensure they're evenly spread.
  3. In another bowl, mash ripe bananas until smooth. Add eggs, vanilla extract, Greek yogurt, honey and melted butter. Mix until everything is well combined. This makes a moist base for your muffins.
  4. Now, gently mix wet ingredients into the dry ones. Stir until just combined - don't overmix. The batter should be a bit lumpy but well mixed.
  5. Preheat your oven to 375°F. Fill muffin cups about 2/3 full with batter. Bake for 18-20 minutes, or until a toothpick comes out clean
