Chicken thighs marinade

Step by step instructions

Begin by preparing your chicken thighs. Select 4 medium pieces preferably with skin and bone. Boneless chicken can be used as well. Ingredients
  

  • 6 tablespoons extra virging olive oil
  • 1 tablespoon tomato paste
  • 4 chicken thighs with the bone-in
  • 2 lemons juice with one lemon juice for the chicken marinate and second for the side dishes.
  • 1 cup greek jogurt
  • 1 medium onion
  • 1 medium cucumber
  • 2 medium tomatoes
  • 2 tablespoons chopped parsely

Instructions
 

  • Place the 4 bone-in chicken thighs in a bowl. Add olive oil, salt and pepper.
  • In a food processor, mix together basil, garlic cloves, lemon juice and tomato paste.
  • Add the processed mixture to the chicken then cover the bowl and let it marinate for at least 1 hour.
  • Pre-heat the oven at 180℃. Place the marinated chicken in an oiled or buttered oven tray or cast iron pan. Add diced red onions to the tray for more flavour. Cook for 45 mins until the chicken is golden and crispy.
  • On the side pour 1 cup of greek yogurt in a bowl and 2 tablespoons of olive oil and salt and pepper for seasoning. Addd to the mixture 1 tablespoon of lemon juice and store until chicken is served.
  • In a separate bowl mix together the salads ingredients: diced tomato, green peppers, cucumber and chopped parsely. Season well with salt, pepper, olive oil and lemon juice and place in the fridge.
  • When the chicken thighs are all done, move to a serving plate. Place on the side the mediterinian salad and top the chicken with few teaspoons of the greek jogurt.
